Spicy Chipotle Fajitas

These fajitas are perfect or brunch or lunch as they're very light but will keep you filled for a few hours. If you like spicy food like me, this is the perfect lunch for you as it's very easy to make as well as it has a tangy flavor. When I first tried this recipe, I failed multiple times by adding too les spice, or too much salt. But when, I got the perfect quantity, I was so happy, I couldn't wait to share it with you guys. I hope you like it!

Ingredients


Fajita filling

1 tbsp vegetable oil
1 medium red oinion, sliced into strips
3 garlic cloves, thinly sliced
1/2 tsp salt
1 yellow bell pepper
1 red bell pepper
1 orange bell pepper
1.5 cups chicken, torn into shreds
2 tsp ground cumin
1 tsp dried oregano
1 tsp paprika powder
1/2 tsp chili powder
1/4 tsp ground black pepper
12 small soft tortilla wraps
3 tbsp diced chipotle peppers dipped in abodo sauce

Toppings

1 avocado, sliced
2/3 cup salsa
1/2 cup shredded red cabbage
1 lime, cut into wedges


Directions

  1. Add oil to a large panon high heat. When it's hot, add the onion, garlic, and salt, and let it cook for 4-5 minutes.
  2. When the garlic and onion is cooked, lower the heat and thinly slices the bell peppers
  3. Come back to the pan, increase the heat to medium-high and add the sliced bell peppers, with the shredded chicken, and all the spices: chili powder, black pepper, cumin, paprike, and oregano. Cook until the bell peppers are cooked but still crunchy. Just to be safe sprinkle some water on the pan to prevent it from burning.
  4. Then, heat up another large pan on medium-high heat, and place the tortillas on the pan one by one. Let them cook for about 10 seconds on each side, then transfer to a plate.
  5. Coming back to the bell pepper fajita filling, add the diced chipotle sauce and cook for another 2 minutes. Remember the sauce is quite spicy so add it according to your spice tolerance.
  6. Now for assembly, top the tortillas with a generous amount of the bell pepper filling along with some of my recommended toppings like avocado, salsa, shredded red cabbage and lime juice. Lastly, enjoy!
