Banana Coffee Muffins

If you are a sweet tooth like me but want to start eating healthy, this is the perfect dessert for you. These muffins are sweet, delicious and are very easy to make. When, I first found this recipe, I was kinda iffy about it because we always have to be careful while using oat flour because it can make your food very dry if over-cooked. But as you know, I love experimenting so I tried t and it turned out super moisted, and went really well with plain milk or coffee if you want an extra boost of caffeine.

Ingredients


Muffins

3 ripe bananas
3/4 cup unsweetened almond milk
1 tbsp melted coconut oil
1.5 cups oat flour
1 cup all-purpose flour
1/2 cup granulated sugar
2 tsp baking powder
1/4 tsp salt
1 tbsp instant coffee powder


Topping

2 tsp granulated sugar
1/4 tsp ground cinnamon
12 raw pecans


Directions

  1. Preheat the oven to 400°F, and slightly grease a muffin tin
  2. To a large bowl, add the bananas and masshed them until pureed
  3. Then add the milk and oil to the bananas and mix well. Then add the sugar and the coffee powder and mix until fully combined.
  4. In a medium bowl mix all the dry ingredients, the all-purpose flour, oat-flour, baking powder, and salt.
  5. Gradually add the dry indregients to the banana mixture. Mix thoroughly until there are no lumps.
  6. Fill the muffin tin with batter 3/4 full.
  7. For the toppings, combine the sugar and cinnamon and sprinkles a little over each muffin. As for the pecans, place pecan on each muffin.
  8. Bake in the preheated oven for about 15-20 mins, or when a toothpick inserted comes out clean.
  9. Let the muffins cool before taking them out of the tin, then enjoy!
